Red (Velvet), White, and Blue Cupcakes

On July fourth, we get to celebrate the best country in the world.  We as Americans are so #blessed to call this country ours, and when it comes to those celebratory grill outs, be the favorite and bring these patriotic cupcakes with homemade cream cheese icing!

What You’ll Need:

  • Red Velvet Cake Mix
  • 3 Eggs
  • 1 Cup Water
  • 1/3 Cup Oil
  • 1/2 Cup Softened Butter
  • 8 oz. Cream Cheese
  • 4 Cups Confectioners’ Sugar
  • 2 Teaspoons Vanilla Extract
  • Cupcake Liners

Cupcake Recipe

  1. Preheat oven to 350 degrees
  2. Combine cake mix, eggs, water, and oil in a mixing bowl
  3. Beat on low until ingredients are wet and then on medium until ingredients are well blended and integrated
  4. Fill cupcake liners approximately 2/3 with batter
  5. Bake according to the box instructions (times vary based on pan size/type)

Cream Cheese Icing Recipe

  1. Beat softened butter and cream cheese until well blended
  2. Add sugar and vanilla; beat until creamy

Decorating Tips

When it comes to icing your cupcakes, there’s a trick to getting that bakery look, as opposed to just slapping on some icing with a knife.  Putting the home-made icing into a ziplock bag creates your very own pipette for pretty swirls. (PRO-TIP: putting your ziplock back inside of a jar makes filling the bag infinitely easier!) Pipe your icing onto your cupcakes, finish with sprinkles, and you’re ready to celebrate the best way American’s know how… with food!
