Three Healthy, Yet Delicious Recipes for the Perfect Summer Dinner

Let’s admit it, eating healthy is hard and once that sun comes up, and the workload goes down, it is even more tempting to break the rules of our usual diet.  Well, pine no more.  These recipes, one for every course of dinner, are perfect to get that great taste while still eating nutritiously.  Enjoy!

Pre-appetizer: Strawberry Salsa

 

Ingredients:

 

  • 2 cups of finely diced strawberries (stem removed)

  • 1 jalapeno, finely diced

  • ½ cup of diced onions

  • 2 tablespoons of lime juice

  • Sprinkle of salt and pepper

  • Honey (optional)

 

Directions:

 

  • Mix all ingredients together

  • Add honey if you want a sweeter salsa

  • Serve with chips and enjoy!


 

Salad: Avocado and Caramelized Pineapple Salad

 

Ingredients:

 

  • pinch of black pepper

  • ¼ cup of chopped, fresh cilantro leaves

  • ⅓ cup of olive oil

  • ⅓ cup of white wine vinegar

  • ⅓ cup of orange juice

  • 1 cup of blackberries (optional)

  • 1 large pepper, cut into inch-size pieces

  • 1 diced red onion

  • 1 teaspoon of sea-salt

  • 1 pineapple cut into 1-inch thick slices

  • 2 tablespoons of sugar

  • 2 ground cloves of garlic

  • 2 cups of chopped lettuce


 

Directions:

 

  • In a small bowl, mix together the sugar and chilli powder.

  • Sprinkle mixture over pineapple slices

  • In a non-stick pan or skillet, cook pineapples over medium heat until golden brown

  • In a large bowl, mix olive oil, orange juice, vinegar, garlic, cilantro, salt, and a pinch of pepper

  • Add mixture to the pepper, onions, pineapples, blackberries, avocados, and lettuce.

  • Gently toss and enjoy!


 

Main course: Fresh Tomato and Corn Pasta

 

Ingredients:

 

  • Pinch of salt

  • Pinch of ground black pepper

  • ½ cup of cooked whole corn kernels

  • ½ cup of chopped onions

  • 1 ground garlic clove

  • 2 cups of bowtie pasta (or any pasta of your choice)

  • 2 tablespoons of red wine vinegar

  • 1 ½ cups of cherry tomatoes

  • 4 tablespoons of olive oil

 

Directions:

 

  • Boil pasta in large pot with water, and a pinch of salt, until ready

  • In a large bowl, mix together vinegar, olive oil, garlic, salt, and pepper

  • Stir mixture with corn and tomatoes, and let it sit for 5 minutes

  • Toss new mixture with pasta, sprinkle parmesan cheese on top if desired

 

Dessert: Berry Chia Mousse

 

Ingredients:

 

  • ½ cups of chia seeds

  • 2 cups of fresh berries (whichever kind you want!)

  • 2 teaspoons of vanilla extract

  • 3 cups of coconut milk

  • 9-10 scoops of Stevia extract powder (or another sweetener of your choice)

 

Directions:

 

  • Put all ingredients in a high power blender until mixture is smooth

  • Pour into container and refrigerate until cold

  • Feel free to add toppings… perhaps sprinkling some more berries on top!
