Tasty Stay-In Date Night Recipes
For many, summer means going out to eat at night and having fun in the sun during the day. Instead of going to the same restaurants for date night, try something new! Become your own cook! It will be fun! Don’t worry if you are not a great cook, these three recipes are foolproof. So, relax and have a fun, memorable night.
Appetizer: Fig Preserve & Blue Cheese Bruschetta
1 baguette, sliced
1/4 stick of butter
Blue cheese, cut into chunks
Basil, for garnish
Cut the baguette. Make the pieces about a half-inch thick.
Melt 1/4 stick of butter in a small bowl in the microwave. Then, spread the butter onto the bread, and toast it in a non-stick pan until they are all golden.
Allow the bread to cool.
Spread the fig preserves on top.
Crumble blue cheese on the fig preserves, and use as much as you like; however, remember that blue cheese is very strong, so a little goes a long way.
Finally, rip up some basil and put it on the top as a garnish. This makes them look as good as they taste!
Main Course: Salmon with Fruit Salsa
half a jalapeño, diced
1 lime, juiced
1 cup of chopped pineapple
1 cup of chopped mango
1/4 of red onion, diced
1/2 of red pepper, diced
pinch of salt
Combine and stir all ingredients in a bowl.
Taste the salsa. Add more salt or jalapeños if needed.
Stick in the refrigerator until ready to eat.
salmon (skin on or off- your choice)
1 tbsp. butter
Preheat oven to 450 degrees.
Spray the salmon with olive oil. Then, season it with salt and pepper.
Heat the pan over high heat for about 1 min.
Spray pan with olive oil.
Place salmon into pan and sear it with the skin side up.
Using a spatula, carefully turn the salmon over to the skin side.
Add the butter in two pieces to each side of the pan.
Place the pan in the oven and roast for 7-8 min.
Dessert: No-Bake Cheesecake *makes 4 individual cheesecake cups*
1 package of cream cheese
1 and 1/2 tbsp. granulated sugar
1/2 cup heavy cream
1/2 tbsp. fresh lemon juice
4 graham crackers
4 cups to put dessert in
Use an electric mixer to beat the cream cheese and sugar until they are smooth.
Reduce the speed of the mixer and add the heavy cream.
Increase speed to high to make the batter stiff and thick. It should take about 2 minutes.
Beat in lemon juice.
Spoon graham cracker crumbs into the jars, then, spread a layer of cheesecake batter. Once you have done that, put in your desired fruits.
Then, make another cheesecake layer. Next, put a thin layer of jam.
Now, you are ready for another layer of cheesecake. Almost there!
Finally, put some more fresh fruit on top. If you would like, you can put whipped cream on top and sprinkle more graham crackers.
